1 cup uncooked quinoa 2 tbsp olive oil 1 medium onion, sliced 1 15-oz can lentils, drained and rinsed Cook quinoa according to package instructions Meanwhile, heat oil in a skilley and saute onion on medium heat until tender Add lentils and cooked quinoa to skillet.  Heat through for 5 more minutes.  Serve with your favorite protein source for a more substantial meal.
